Ingredients for 4 people
1.5 kg sea bass (1 big or 2 small fish)
6 medium sized potatoes cut in rings
2 onions cut in rings
4-5 cloves of garlic, finely chopped
½ cup of olive oil
100 ml dry white wine
A bit of oregano and a bit of finely chopped parsley
Salt and fresh ground pepper
1 tablespoon of flour
Juice of one large lemon
1 vegetable bouillon cube (optional)
Clean the fish, removing their scales, entrails and gills.
Wash thoroughly, salt both inside and out and place in refrigerator for one hour.
Heat the olive oil in a pot and sauté the onions and the garlic until tender (5 min, approximately) but do not let them brown.
Add the potatoes and continue to sauté for 5 more minutes.
Sprinkle with oregano and flour and then add salt and pepper.
Douse with wine, add 3 cups of warm water, one vegetable bouillon cube, and simmer for 15 minutes.
Add the sea bass and simmer for another 18 minutes (if you have a large sea bass allow for a bit more time).
When the food is in its own juice pour the lemon juice and serve carefully so that the vegetables are not mashed.
Sprinkle with finely chopped parsley.
Uncover the food and if you like pour the fish juice in a small pot, add lemon juice, butter cut in small cubes and finely chopped parsley, and serve it as a sauce for the fish.
Otherwise, let the food cook uncovered for a while so that the juices evaporate.
