Ingredients for 4 people
1 big sea bream
3 tablespoons of butter
2 big dry onions and
2 fresh onions cut in rings
5 carrots cut in rings
2 cloves of garlic, finely chopped
2 stalks of celery, finely chopped
1 tablespoon of fresh coriander, finely chopped
1 tablespoon of fresh thyme, finely chopped
1 cup white dry wine
Salt, white pepper.
Heat the butter and sauté the onions and the fresh onions until they are tender.
Add the carrots, the celery and the garlic and continue to sauté for 3-4 minutes.
Douse with wine and boil at high heat for 5 minutes.
Add spices and salt and pepper.
Place the sea bream (after cleaning it) in a large baking pan and sprinkle the sautéed vegetables and spices on top.
Cover the pan with aluminium foil and bake for 45 minutes.
